Char Siew Fan (叉烧饭)

In our SG Retro Series 2, we pay homage to Char Siew Fan (叉烧饭). It is a Cantonese-style meal served with fatty, juicy, sliced barbequed pork in red dye, on rice with a sweet thick gravy. The name Char Siew actually mean ‘fork roasted’ in Cantonese and it refers to how the pork was barbequed traditionally.

About the Design

Wan Tan Mee (云吞面)

In our SG Retro Series 2, we pay homage to Wan Tan Mee (云吞面). Like Hainanese Chicken Rice, Wan Tan Mee is ubiquitous all over Singapore. For the discerning Singaporean foodie, they can tell the difference between the Singaporean version from the Malaysian and Hong Kong version. Here’s a little trivia how the name Wan Tan Mee came about. The floating dumplings in the soup resembled floating clouds and you normally swallow them together with the soup. Wan Tan actually mean swallowing clouds in Cantonese.

About the Design

Cantonese Dim Sum (点心)

In our SG Retro Series 2, we pay homage to Dim Sum (点心) which is more commonly known as Cantonese Dim Sum in Singapore. Originated from Guandong province in southern China, Dim Sum is a Cantonese breakfast hugely popular in Guandong and Hong Kong. Brought over by the early Cantonese migrants to Singapore, Cantonese Dim Sum is one of the Singaporean favourites when you want to splurge a little more for your breakfasts.

About the Design

Hainanese Pork Chop(海南炸猪排)

In our SG Retro Series 2, we pay homage to Hainanese Pork Chop (海南炸猪排). This delectable dish is created by the early Hainanese migrants who worked as chefs for English households during the colonial era in Singapore. Using tomato ketchup, worcestershire sauce (or HP sauce), potato chips and peas, they created our unique version of localised western pork chop.

About the Design

Hainanese Scissors Curry Rice(海南剪刀咖喱饭)

In our SG Retro Series 2, we pay homage to Hainanese Scissors Curry Rice(海南剪刀咖喱饭). Drenched with different thick, gooey, curry sauces and braised pork sauce, it is a delightful mix of tastes in every mouthful. But why is it called ‘Hainanese Scissors Curry Rice’? The original stall at Telok Ayer market started in the 1930’s and in those days, there were a lot of gang fights around. Whenever a fight broke out, they would reach for the cleaver used for cutting the food at the stall. To reduce the fatalities during these fights, the owner switched to using scissors instead to cut up the dishes.

Hainanese Chicken Rice(海南鸡饭)

In our SG Retro Series 2, we pay homage to this iconic Hainanese dish: 海南鸡饭. Arguably, the most famous Singaporean Hawker dish, Hainanese Chicken Rice is known for its fragrant rice, juicy, tender chicken slices, and a spicy, sour Chilli. Invented by early Chinese immigrants from Hainan Island in the late 19^th century, it is a popular dish that can be found in affordable hawker stalls as well as high end restaurants all around Singapore.

Hakka Abacus seeds ( 客家算盘子)

In our SG Retro Series 2, we pay homage to this iconic Hakka dish: 客家算盘子. What do these savoury, chewy, coin-sized discs made from yam and tapioca flour resembles? They are reminiscent of the beads found on the Abacus, an ancient calculating tool used by shop owners in the old days. Stir-fried with garlic, shallots, cuttlefish, dried shrimp, black fungus and mushroom, this aromatic delicacy is so addictive, you can’t stop with just one bite.

Hakka Thunder Tea Rice (客家擂茶)

In our SG Retro Series 2, we pay homage to this iconic Hakka dish: 客家擂茶. In Hakka, the character “Lei“ (擂) means to grind but it is pronounced the same way as the Chinese character for thunder “雷”. So, the name of this healthy Hakka dish is playfully translated to Thunder Tea Rice when it refers to mixing grinded ingredients like nuts, chopped vegetables and tofu with rice.

Hakka Yong Tau Foo Stuffed Tofu (客家酿豆腐)

In our SG Retro Series 2, we pay homage to this iconic Hakka dish: 客家酿豆腐. Get energised and ‘stuffed’ with power by starting your day with a bowl of Yong Tao Fu (loosely translating to “stuffed tofu”), a medley of healthy ingredients stuffed with minced meat and fragrant spices.

And why feature a tough lady? Because the Chinese character 酿 sounds like 娘 which means lady and if you have not heard, traditionally Hakka women were known to be tough.
